Mum's Recipe: Shrimp and String Beans Stir Fry with Lemon Sauce

I always love cooking! I love learning and discovering new dishes once in a while. It gives me the opportunity to get creative, bond with my kids by engaging them to help me out on simple preparations, and the best part of all - it's one activity that clears my mind from all the other daily stresses.

But as a working mum, I seldom cook. Given the chance and if my busy schedule permits, I always took advantage of that time to cook and share my kitchen expertise(Naks!).

Today, I am so inspired to cook this simple dish that I found from the web which I gave a twist of my own. Instead of asparagus, I am using the local string beans (sitaw) to make it more budget-friendly. 

Shrimp and String Beans Stir Fry with Lemon Sauce

4 tablespoons olive oil
10 pieces medium size shrimp(peeled)
10 pieces string beans, cut into 2-3” long
1/2 teaspoon salt
1 teaspoon minced ginger
1 teaspoon minced garlic

Lemon Sauce
1 cup chicken stock
1 tablespoon cornstarch
1 tablespoon sugar
1 tablespoon soy sauce
1 lemon(squeezed)
1 teaspoon lemon zest


  1. In a small bowl, whisk together all of the lemon sauce ingredients and set aside.
  2. In a frying pan, heat 2 tablespoons olive oil over medium-high heat. Add shrimp to pan in a single layer and cook for about 3 minutes, turning them over to cook both sides.  Season shrimp with 1/4 teaspoon salt.  Shrimp should be beginning to pink on both sides and be opaque, but just slightly undercooked.  Remove from frying pan and place shrimp on a plate.
  3. In the same frying pan, heat another 2 tablespoons of olive oil over medium-high heat.  Add string beans cook until it is tender-crisp, bright green and just barely beginning to brown.  Season the string beans with 1/4 teaspoon salt(or more if needed).  Add ginger and garlic and stir to combine with string beans.   And allow to cook.
  4. Pour in lemon sauce mixture into frying pan with string beans.  Add shrimp back into pan and combine sauce with string beans and
  5. shrimp.  Simmer for about a minute or until sauce is thickened.  Remove from heat and serve.

My boys enjoyed my new recipe and they love the moment we’ve shared in the kitchen.  It’s priceless!
